Pumpkin stew with sausages by Pascale de La Courgerie

Ingredients
- 15 ml (1 tablespoon) olive oil
- 1 chopped onion
- 2 chopped garlic cloves
- 1 can (about 500 ml) white beans, drained and rinsed
- 15 ml (1 tablespoon) cilantro
- Salt and pepper, to taste
- 500 ml (2 cups) squash, sliced
- 250 ml (1 cup) beef broth
- 8 deli sausages
Preparation
- Preheat the oven to 180 °C (350 °F). In a skillet, heat the olive oil and sauté the onion and garlic until golden, about 5 minutes. Add the beans and cilantro.
- Season with salt and pepper.
- Arrange the squash slices in an ovenproof dish. Add the onions and garlic. Pour in the broth and place the sausages on top. Cover.
- Bake for 1 hour.
SWEET AND SAVORY BREAD WITH APPLES FROM QUI SÈME RÉCOLTE

Cooking time: 40 minutes
Servings: 8
Suggested apples: any variety
Ingredients
- 500 ml (2 cups) flour
- 5 ml (1 teaspoon) baking powder
- 2.5 ml (1/2 teaspoon) baking soda
- 2.5 ml (1/2 teaspoon) ground cinnamon
- 375 ml (1 1/2 cups) grated cheese (Cheddar, Gouda, or other hard cheese)
- 2 eggs
- 125 ml (1/2 cup) maple syrup
- 375 ml (1 1/2 cups) apples, peeled, cored, and grated
- 250 ml (1 cup) diced ham
- 60 ml (1/4 cup) chopped walnuts
- Oatmeal, to taste
Preparation
- Preheat the oven to 190 °C (375 °F).
- In a bowl, combine the flour, baking powder, baking soda, cinnamon, and cheese.
- In another bowl, beat the eggs and maple syrup until the mixture is creamy and smooth.
- Stir in the dry ingredients. Add the apples, ham cubes, and walnuts. Mix well.
- Pour the batter into a buttered and floured 23 x 13 cm (9 x 5 in.) baking pan. Sprinkle with rolled oats.
- Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool slightly, remove from the pan, and let cool completely on a wire rack.

NATHALIE'S SWEET APPLES FROM QUI SÈME RÉCOLTE

Core an apple or cut it in half and remove the core.
Fill the apple halves or the center of the apple with a mixture of whatever you have on hand, for example:
- Peanut butter / almond butter / hazelnut butter
- maple syrup or caramel
- dried fruit and chopped or crumbled nuts, or granola.
Bake on a baking sheet at 350 degrees for 20 minutes.
Enjoy as is, with vanilla ice cream, or a splash of mulled cider. A simple delight!
